Positivity Press #13

My positive moment was when I visited my family yesterday and made them a lovely dinner for Memorial Day. I made chocolate bread pudding, whipped cream, pork ribs, bbq sauce, potato salad, and tomato basil soup. It was delicious.

Caramelized banana oatmeal

Good morning! I don’t know what time it is in your country (tell me in the comments) but here in Croatia it’s 10:20 in the morning and I’ve been up since 8. Decided to take a morning walk to clear out my head and run some errands and now I’m enjoying my delicious, sweet breakfast.

I wrote in my post Grateful that I’m a big breakfast enthusiast so I decided to share one of my favorite and very easy breakfast recipe. This is my caramelized banana oatmeal.

All you need is some oatmeal, a banana, honey, salt, coconut oil and cinnamon. You cook your oatmeal on the side and you heat up a pan. Place the coconut oil, honey, salt and cinnamon on to the pan and when everything is nice and melted place your banana slices there. Turn them once to get some caramel on the other side as well. When you place everything into the bowl add some more cinnamon or flax seed, as you wish and enjoy your breakfast!

In my version there is also a large cup of black coffee waiting for me because I have so much studying to do today. I was a bit disappointed yesterday because I found out I failed an exam. It was actually translating a text from Croatian to Spanish and I honestly thought I did a good job, but no. I failed. It’s not the end of the world because I have the right to take the exams four more times so I’m going to study really hard to pass it.

Merry Christmas

Merry Christmas

Merry Christmas everyone! This is definitely my favorite holiday but today I’m not having such a great time. I came home on Thursday and let me tell you that the ride home was a mess. Our car broke down and me and my brother-in-law had to wait for the towing service for an hour and a half. When we finally got home, we had some dinner and the next day I spent the evening with my friends which I haven’t seen for four months.

Saturday was a family day for me. I went to see my grandma and in the evening I had dinner and opened a bottle of wine with my family. Then the Christmas morning came and I wanted to kill myself.

I have such a terrible cold. I can’t breathe and what’s worse of all I can’t eat. All of this food and I’m sick to my stomach. I’m trying to keep a positive attitude but it’s not working that well so my plan is to stay  warm under the blanket and watch movies.

Here are some pics from my past few days home and some pics from my nephew’s Christmas photo shooting. As you can see Christmas in my house revolves around my baby nephew because it’s his first Christmas and he is just so adorable!

Advent in Zadar

Advent in Zadar

Yesterday I went to the Advent in Zadar with my friends. The night started great with me waiting for the bus and my friend Leonora calling me to tell me she’s late. That’s kind of her thing. She rarely comes in time for anything. I went back to my apartment because it’s very close to the bus station and I waited for another bus. When we finally got to the Advent we found our friends. We drank mulled wine and enjoyed the Christmas atmosphere. It wasn’t cold for me but it was for my friend so we ended up in a bar drinking wine and talking. It was such a sweet night.

I woke up late today and I was craving a big, tasteful breakfast so I made one. My regular cup of coffee, water, sandwiches and orange. Now that I’m full it’s time to get down to business but it’s really hard because the only thing I can think about is going home this week and Christmas. I just can’t wait.

Breakfast and barbecue

I ate too much yesterday. Waaaaay to much. My friends and I had a small barbecue and in the morning, while everyone was still sleeping, I made my boyfriend and me some breakfast. We went to McDonalds last Sunday and he really wanted to try the Mcwrap breakfast tortilla so I gave it a go. It turned out pretty good, pretty tasty, I was proud of myself because I am not much of a cook.

The tortilla is homemade and it’s one of the rare things I can do because it’s extremely easy. Some water, flour, salt, oil and tadaaaah. We filled them up with some scrambled eggs, salad, tomatoes and bacon. On the side we have some fruit, a cappuccino and I have to drink my magnesium which tastes awful.

Later that day we had a barbecue. The boys did most of the work. Ivana and I made sure we have something to drink. There was some beer for the guys and some wine for us. I just have to say it was so good. After we ate we watched some TV and in the end we watched Deadpool so I had a chance to see the whole movie and not fall asleep like last time.

Saturday breakfast

So I’ve been through a lot this week, from my illness to my exam, so I just decided to treat myself this morning with some pancakes.

I don’t think I ever talk about this, but I just loooooove food and also I’m big on healthy eating but not in the way that I’m going to judge people for not eating healthy or try to make you convince you should prep your meals in advance etc. I just eat mostly healthy for me and my pancakes are also semi-healthy so I will just put the recipe here if you want to try them.

Ingredients:

  • whole wheat flour
  • 2 egg whites, one egg yolk
  • baking powder
  • honey, sugar, stevia or any other sweetener
  • milk (low fat, almond, soy….)

Put the egg whites into a special bowl and mix them until you get an egg whites snow. In another bowl mix your egg yolk with some milk and add flour, baking powder and something to sweeten it up if you want to. Put the egg whites into the mixture with a wooden spoon. It’s important to do it like that so it keeps it’s texture.

Get some oil (I used coconut oil) into the pan and make little pancakes. If you didn’t add any sweetener into the mixture you can eat them with some honey, maple sirup or, like I did, with some jam. I buy this jam for years because it has a higher percentage of fruit and has some chunks of fruit in it and it’s sooooo delicious. Hope you like my recipe and that you’ll try it!

Little breakfast sandwiches

Good Morning! I’m going to die of boredom today. It was raining all night long and it’s cold outside so no beach for me today. I think I’ll start reading a book. The owner of the apartment left some book behind so I’ll check out if they’re any good.

Anyway I started my day with a bit of unusual breakfast for me. Most of the days I have oatmeal and fruit but today I didn’t feel like eating it. I got some whole wheat crackers, peanut butter and jelly, peanut butter and bananas, cream cheese and chicken salami, an apple and of course that my daily dose of caffeine is here! I’m Luna and I’m a coffee addict.

Also yesterday I started doing 30 days of yoga with Adriene (hope I spelled her name correctly). Does anybody have some experience with her or any recommendations for me? I usually workout at least 4 times a week but I’ve always only done pilates, cardio and some Shaun T workouts because I love him and yoga is a whole new world for me.
