This Friday will mark my first week eating according to my food intolerances and today I discovered pasta that I can actually eat!
Since I am not only intolerant to gluten but to certain grains as well, some of my options include rice and buckwheat as long as it’s all gluten free. Most of the pasta I have found before were gluten free but they would be a mixture of buckwheat and wheat which I can’t eat and today not only did I find pure rice flour pasta but I also found buckwheat pasta and both of them are vegan and gluten free.
My life is just a beautiful fairytale.
I bought the rice one because it was cheaper in comparison to the buckwheat one, but I will try that one next time. I also found a premade sauce that I can eat as well and tonight was pasta night.
It did not disappoint but I also didn’t have high expectations because I know these foods that I eat will never taste like the “originals”. The rice pasta is a bit harder that wheat pasta but it wasn’t bad.
This whole week has been very interesting when it comes to cooking. I based my diet mostly on fruits, veggies, meat and falafel. Step by step I am learning how to season my food to make it taste better because I can no longer buy so many premade things and I am a terrible cook.
One thing that I am literally scared of is my first PMS with this new diet. It will happen very soon, I checked my calendar and I also decided to prepare for it. I know myself and I know damn well I will be craving chocolate, cake and ice cream so I am already exploring some recipes that do not include eggs, gluten and dairy. You can bet it’s hard! I cannot even buy vegan candy because my stomach does not approve of soy.
Overall, I have to say that I have been feeling better this week. I haven’t been extremely nauseous once this whole week and I think that’s the first time in my life that has happened. No stomach pain, no cramps, no indigestion, no bad digestion. I still have some issues, but that’s normal especially because my body is adapting to a whole new diet.
I did not take a picture of my lovely pasta because the only thing I wanted was to eat it so sorry….

Yay! Rice noodles are great too. And a buckwheat & quinoa breakfast cereal that I can get In Australia is great if you can find something similar – or make your own. Onwards and upwards is my wish for you.
I am diabetic and a chocoholic but have found some lovely very low sugar, 1% to 6% and it has no dairy, soy, gluten, GMO, or palm oil and is suitable for vegans! It tastes heavenly and is called Pure Heavenly. Of course, it is here in the UK 🇬🇧 but you may have something similar.
